So I think I can think of a couple good literary matchups from the fantasy genre for future literary death battles:

Harry Dresden (Dresden Files) vs James "Sandman Slim" Stark(Sandman Slim): Both wisecracking, quick on their feet, underdog, magic wielders in the urban fantasy genre that always manage to find their way on top of dire situations.

Kaladin Stormblessed (Stormlight Archive) vs Richard Cypher (Sword of Truth):  Shardblade vs Sword of Truth, both blades sharp enough to cut through anything while having minds just as sharp: which one wins?

I feel like you undersold Paper Mario. He may be paper but he has fought 3D people before including fighting alongside regular Mario in a crossover game. Not to mention he has faced some pretty insane threats such as Dimentio.

Should have been Super Skrull, but chances are that they're working on that as an actual DB

As much as I would love some literary characters on Death Battle, they honestly aren't viable options. Lore feats and otherwise pure text feats typically do not provide any reasonable means of quantification, IE, when a character lifts a giant boulder, we're given no indication of how big that boulder is. It could weigh 5 tons, or 50 tons, or 500 pounds, and 99% of the time there is no reliable way to determine that. Even if someone is described as "having the strength of ten men," taking that literally can backfire. It could just be an expression, or the ten men might be different in strength than taking the average strength of a person.

Kaladin Stormblessed is a great microcosm of all the literary problems, in fact (Loving Oathbringer, by the way). His lashings are gravity-based so we could figure out that, but we have no idea how strong stormlight makes him, we don't know how fast he regenerates wounds, we don't know the exact dimensions of those sticky spots he makes and how effective they are, and perhaps most importantly we have no clue of how long stormlight lasts doing what and how what he does impacts its longevity, how much stormlight a single broam or chip holds, and on and on.

TL;DR, pics or it didn't happen. Visual media is a necessity to get solid numbers and data. The only way this couldn't be an issue is if one fighter so obviously beats his opponent in a certain category that hard numbers are not needed, in which case we likely have a stomp on our hands and the fight would probably not be worth it.

I mean, if the team wanted to try it as an experiment by all means, but I don't see how the execution would not leave a bunch of loose ends someone unhappy with the result could pull on to tear the argument and verdict apart.

Though to end on a lighter note, I'm guessing Chad's interested in that Wheel of Time TV adaptation. That book series has some superb Death Battle hopefuls provided they get the screentime they need on the show; Aragorn might have his perfect foe in Lan, for example.

Tien's third eye is because he's a decedent of a race of three-eyed humanoids, commonly referred to as Triclopes.
